Cream Cheese Chicken Enchilada Nachos #Recipe

You might as well Pin this now because it is literally the easiest and most delicious food EVER.  My husband hates chicken, but eats this up in a second because it is that good.  Enter cream cheese chicken enchilada nachos.

Ingredients:

  • 3-4 chicken breasts (I prefer frozen to start with)
  • 1 can of red enchilada sauce
  • 1 bar of cream cheese.  Neufchatel cheese is great too and less fat!
  • Tortilla chips

Directions:

  • Place chicken in crock pot, pour the can of enchilada sauce over chicken, cover and let cook on medium for 4-5 hours. 
  • About an hour before serving add the bar of cream cheese and allow it to melt.
  • Right before serving, stir the chicken, it should easily shred.
  • Pour over tortilla chips and garnish with your favorite toppings!

Pro Tip:  Buy the Ziploc Slow Cooker Liners for easy clean up.  Literally BEST INVENTION EVER!

Yum!! And so easy!! Definitely trying this My friend made some with cream cheese and a can of chili and a bottle of that nacho cheese. I know, it sounds weird, but it is delish!! Definitely trying this! Thanks!
