Make the Most of Spring
Cheesecake Ice Cream Lasagna
Look, I am all for easy, but sometimes you have to add a little flair to those desserts and this cheesecake ice cream lasagna is one of my favorites to make and one of my family’s favorites to eat. It is actually pretty easy to make too!
First, create the waffle cone crust and pressed it into the bottom of the dish. It is easiest to do this with a food processor, so that you get a nice even fine crush to your waffle cones. Once you have that done, then layer in your ice cream choice.
Next, make a layer of whipped cheesecake for that lasagna! A little cheesecake pudding mix, some whipped topping and a little milk and sugar and this layer was ready to place on top of your ice cream layer.
The next layer is your crunchy goodness! I am a big fan of peanut butter cups and so I cut up some cups and crunched some waffle cone pieces and sprinkled those evenly on top of the whipped cheesecake layer. To add a little more, I added some chocolate syrup too! I repeated those layers one more time and froze overnight. The result is probably the most delicious Cheesecake Ice Cream Lasagna.

Cheesecake Ice Cream Lasagna
A delicious blend of Ice cream, waffle cone pieces, peanut butter cups, whipped cheesecake and chocolate syrup
Ingredients
- 8 whole Waffle Cones
- 1/4 cup Melted Butter
- 2 TBS Sugar
- 46 oz container of your favorite ice cream
- 4 oz Whipped Topping
- 1.5 oz Cheesecake Instant Pudding Mix
- 1/4 cup Milk
- 10 pieces Peanut Butter Cups
- 1/4 Cup Chocolate syrup
Instructions
To make the Waffle Cone Crust:

Use a food processor to finely chop up 6 waffle cones

Add in 1 TBS of sugar and the melted butter to the processed waffle cones.

Spread in the bottom of a lightly greased casserole dish.
To make the Cheesecake layer:

Mix the cheesecake pudding mix, 1 TBS of sugar and 1/4 cup of milk together until dissolved.

Whisk in the whipped topping until mixture is fluffy.
To create the lasagna:

Press the waffle cone crust at the bottom of the lightly greased casserole dish.

Scoop 1/2 the container of ice cream into the casserole dish, atop the waffle cone base and spread evenly. Place in freezer and prepare the cheesecake layer.

Bring the casserole dish out of the freezer and layer on the whipped cheesecake layer. Spread out evenly.

Cut up 5 peanut butter cups and break 1 waffle cone into pieces and spread those evenly on top of the cheesecake layer. Then pour some chocolate syrup over that.

Add the last 1/2 of the ice cream container on top of that and freeze for 6 hours or overnight.

Top with the last 5 peanut butter cups, 1 waffle cone and some more chocolate syrup.

DIY Bubble Wands!
In our world, having a sweet treat is great, but having entertainment that we can create inside and use outside as the weather permits is critical! Our fun this past weekend was making bubble wands and you guys, they are so easy to make and give your children hours of entertainment!
The bubble wands are super easy to make! Just grab some pipe cleaners and twist them into whatever shapes and sizes your little heart’s desire. We did reinforce the handles of our bubble wands by winding another pipe cleaner around them, but they worked perfectly.
