Ten month old babies are not jut sick for 3 weeks and they definitely do not lose weight.  It was at this point that we found out that our tiny peanut was much more than tiny, she was failing to thrive.

In the photo above is my tiny girl at nearly 11 months old.  The sleeper she is wearing is 3-6 months for reference.  She was eating everything in sight and still not on the charts.  The doctor ran a lot of blood tests over and over again and we were given potential diagnoses of low iron, GERD, and even leukemia.  My mommy heart was broken, and it was that point, that I just had to trust in the doctors and hope that everything would be ok.

We were put in touch with a dietician/nutritionist and asked to keep a long food journal of everything that she ate.  Anything that went into her system even water was logged for weeks.  We also went in for more blood work often to make sure that her white blood cells were coming down to help rule out leukemia.  Due to the fact that I was still nursing I also was put on a special diet to increase her fat intake and to hopefully help her gain weight.

Over the last two years we have struggled to get her on the charts and keep her there.  Our only saving grace through this entire ordeal was that she was hitting all her developmental milestones.  I am thankful we never had to do feeding tubes and that by the time she was 18 months she was on the growth charts (3%).  At 3 years old we are still battling the weight gain and sit right around the 2-3%, however, the doctors have also come to the conclusion that she just might be a super tiny girl.

To keep our weight up and stay on the growth charts I grabbed some PediaSure® Grow & Gain from my local King Soopers and decided to whip up a Fabulous All-Dressed Pizza Frittata!

Ingredients (Serves 4):
  • 1 eight ounce bottle of PediaSure® Grow & Gain Vanilla Shake
  • 8 eggs
  • 2 medium potatoes thinly sliced
  • 1 small onion chopped
  • 1 TBS olive oil
  • 1/2 C of ham and pepperoni diced
  • 1/2 green pepper sliced
  • 1 C sliced mushrooms
  • 1 C pizza sauce
  • 1/2 C grated mozzarella cheese

Directions:
  1. In a large skillet heat up the olive oil on medium heat.  Once warm, add the potatoes and onion. Cook covered for 10-12 minutes.
  2. Add the mushrooms, green peppers, diced ham and pepperoni and cook for another 1-2 minutes.
  3. While waiting for the potato mixture to cook, whisk the eggs and PediaSure® together.  Once time is up on the potato/veggie/meat mixture, pour the PediaSure®/egg mixture into the skillet. Cook for 10-12 minutes until the egg mixture is almost set. 
  4. Spread the pasta sauce mixture evenly over the set frittata and add cheese.  Cook until cheese is melted and serve!

This makes a yummy breakfast and is a great way to get those veggies, fiber and protein in!  Luckily our tiny peanut likes her veggies and she truly enjoyed this pizza frittata.
