We are already six weeks into our school routines and so far I have failed to keep up with my kids homework, the house, laundry and my sleep. Folks, it is a real tough transition as of late. I am not sure what is happening, but I will tell you that I needed something to step in and get me out of this slump. Thankfully, Foster Farms came to the rescue with their Easy Orange Chicken.
Cooking lately has happened about three times a week. There is usually one night a week that we have take out because we are not home and then the other nights, we are just snacking on whatever we find in the fridge, especially when college football is on. I used to be much better at planning dinners, but I think I am still coming out of that graduate school cloud and my body is trying to catch up on everything. With game day season upon us, we are spending more time watching the college match ups and that gives me less time to spend in the kitchen.
Regardless, I was pretty happy when Foster Farms reached out and asked me to try out a couple of their simple dinner solutions. Yes! I totally need simple in my life to get me back into this game of life! I frequently purchase Foster Farms raw chicken for cooking, but had yet to try any of their frozen varieties. It was pretty simple to locate the many options in our freezer section at King Soopers.
Many options to choose from, but the one on my list was the Orange Chicken! My kids love chicken and oranges and I thought it would be a great idea to have a little asian inspired evening, that was very simple. I grabbed a bag and some rice and ran home to put dinner together before we curled up to taken
Dinner took 25 minutes from oven to plate. I simply followed the directions on the package and baked the white meat chicken bites for 20 minutes. Removed them and coated them in the delicious orange sauce and served with a side of rice and asparagus.
I was nervous for my kids to try something a bit different, but they actually enjoyed it. Boom! Dinner win of the week and it was stress free. I was able to take in a few college game plays while the meal was cooking and once it was done, plating the meal took a couple minutes. I didn’t even miss a play!
