Taco Tuesday hit our house hard last week and my kids were begging for something to hit the spot.  I wanted to keep it low carb and also make it something everyone would enjoy, so I grabbed some of my favorite low carb items and got to work creating this awesome Low Carb Garlic Salsa Taco Bake.

Low Carb Taco Bake Recipe Walkthrough

This is a super easy recipe to make and is full of flavor too!  It is just 4 ingredients and takes a short time to prep and is very kid friendly.  Start by preheating the oven to 350º and then brown ground beef in a pan.

Once the beef is cooked through, add a can of black beans and a half cup of garlic salsa.  For the black beans if you want to go very low carb you can use black soy beans which is usually around 8g of carbs per 1/2 cup of beans.  I only had regular black beans which is still only 19g of carbs per 1/2 cup, and for one serving you only have maybe 1/6 of a cup which is around 4g of carbs.

Mix the beans, salsa and meat together and if needed, drain off any drippings.  Then place the mixture in 8×8 casserole dish to prep for a quick bake.

Top the low carb taco bake mixture with a generous amount of cheese (or not, you choose) and bake until the cheese is melted.  I also like to broil it to add just a little crisp to the cheese for a couple minutes on high as well.

This goodness can be topped with lettuce, tomatoes, chives or anything else you want or eaten as is.  I haven’t been grocery shopping in a couple weeks so I went with plain.  My kids also like to eat it with tortilla chips.  I do not because I want to keep it as low carb as possible.

Low Carb Garlic Salsa Taco Bake

An easy low carb taco bake recipe with garlic salsa. 

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings 6 servings

Ingredients

  • 1 lb ground beef
  • 1 can black beans Use soy for lower carbs
  • 1/2 cup garlic salsa Tostitos has 2 carbs per TBS
  • 1 cup Mexican shredded cheese

Instructions

  1. 1. Preheat oven to 350º

    2. Brown the ground beef

    3. Mix in the beans and salsa with the ground beef and cook for about 5 minutes. 

    4. Drain the mixture if needed and then place in a casserole dish. 

    5. Top with cheese and bake for 5 minutes or until the cheese is melty.  You can also broil to add a little crispiness to the cheese layer. 

    6. Top and serve with your favorites!

  • Ground beef = 0g
  • Black beans = 4g
  • Garlic Salsa = 2g
  • Cheese = 0.5g
  • TOTAL = 6.5g per serving!
