I have yet to post about my love of my Instant Pot. You guys, I love it. I bought it last year during the summer and basically it is a my go to kitchen appliance. I cook with it 3-5 times a week and I am convinced that I can make anything in it. One of the recipes I had to try were Cabbage Rolls that my grandma used to have during our Christmas celebrations. Check out that easy recipe below.
I started by sautéing 1 TBS of butter, 4 cubes of chicken stock and 1 cup of water in the instant pot.
While that was going, I steamed up cabbage leaves and rice. If I were to make this again, I would use whole grain rice instead of jasmine rice to make sure that it was better for my diabetes. I steamed 12 cabbage leaves and 1 1/2 cups of rice.
While sauteing and steaming those ingredients, I prepped the ground beef. I just mixed the beef (uncooked) with some garlic salt and seasoning salt.
Once the rice was done, I mixed it in with the ground beef until it was a uniform mixture. I think next time only 1 cup of rice would be perfect.
As the cabbage leafs finished steaming, I laid them on a plate and filled them with 2 TBS of the meat/rice mixture and then rolled them up. I made sure to tuck the sides in well so that the mixture did not spill out during the cooking process.
Once all cabbage rolls were prepared, I moved them into the instant pot.
The broth was ready by this time. I placed the trivet in the bottom and then placed the cabbage rolls atop the trivet.
12 cabbage rolls fit perfectly in my instant pot. The broth smelled so good and I was so excited to sink my teeth in these babies!
I set the pot on manual, high pressure, sealing for 5 minutes and let it do its magic. What I love most about the Instant Pot is how quickly it cooks food and how delicious the food always turns out. I can put frozen roasts in and they cook in 40 minutes along with anything else I put in. You can cook sweet desserts and savory soups. Anything that you can make in a slow cooker is made better and faster in the Instant Pot. It is my favorite kitchen item!
When the alarm went off and the pot finished its natural pressure release, I opened the lid to find the perfectly cooked cabbage rolls, just the way I remember them from grandmas.
