It is summertime and that means grilling! I had to share our to die for chili lime grilled chicken recipe that your family is going to flip over!

Summertime is my favorite time. When you combine bare feet in the grass, gardening, my kids playing and something tasty on the grill, I am basically in my own slice of heaven. Speaking of garden, that beautiful little treasure is something I have grown to love and tend to. Growing our own food is so enjoyable and this year we have a ton in the garden and I have loved harvesting and eating everything!
We grow a ton of veggies and I love snacking on them straight from the garden, or adding them to a tasty recipe or grilling those babies right up! I live for grilling in the summer. The heat stays outside, the food always is yummy and it is so enjoyable to hang out and soak in that vitamin D while those smoky aromas whirl through the summer air. Speaking of grilling, the cilantro in my garden was ready to harvest and I knew exactly what I was going to make with it!
Chili Lime Grilled Chicken
I am a big fan of spice, zest and a little zing in my food. One of the easiest marinades that I make is a 6 ingredient chili lime marinade. I always grab a jar of Better Than Bouillon as a base for the marinade and love to throw in fresh cilantro, limes and seasonings! Thanks to my garden and my pantry, I had everything I needed to make this amazing marinade.
You have to start with Better Than Bouillon. In fact, you just need to go out and get all the varieties right now because this concentrated paste is a game changer and will boost the flavor of your marinade, rub, sauce or anything else you use bouillon for! I love that is is not gritty like those cubes and that it has a much longer shelf life over those canned broths and that there is a wide variety of Better Than Bouillon bases to choose from!
Prepping the Better Than Bouillon base is super simple. Just follow the directions on the jar and bring 8 oz of water to a boil and add in 1 tsp of Better Than Bouillon base and stir until it dissolves then remove from heat and allow to cool a bit. While you are waiting for the broth to cool, prep the rest of the marinade ingredients in a small mixing bowl.
Simply juice 1-2 limes, add in some onion salt, chili powder and garlic salt and if you love cilantro like we do, toss in a bit of that as well. Then when your broth is cool to your liking, pour it into the bowl and gently whisk all the ingredients together!
Once the marinade is ready, place 3-4 thawed chicken breasts into a gallon zipper bag and seal. Place the marinating chicken in the fridge for 2-4 hours (the longer the better). The Better Than Bouillon jars also need to be refrigerated after opening, so do not forget to put them both in.
Once the chicken has marinated for a few hours, go ahead and place the meat on your hot grill and cook thoroughly. This chicken will come out with a little spice, a lot of flavor and SO juicy. My family always goes back for more of this awesome chili lime grilled chicken.

Chili Lime Grilled Chicken
This is the easiest, most flavorful and juicy chili lime grilled chicken around!
- 3-4 Chicken Breasts Thawed
- 1 tsp Better Than Bouillon Roasted Chicken Base
- 8 oz water
- 1-2 limes juiced
- 1 tsp onion salt
- 1 tsp garlic salt
- 2 tsp chili powder
- 1/8 cup cilantro (optional)
Bring the water to a boil in a saucepan and add in the Better Than Bouillon. Mix until dissolved and then remove from heat.
In a small mixing bowl, add the juiced limes, onion salt, garlic salt, chili powder and cilantro.
Once the bouillon broth is cool, pour it into the mixing bowl with the other ingredients and whisk well.
Place the chicken breasts in a gallon zipper bag and then pour the chili lime marinade into the bag. Make sure the chicken breasts are all covered and then place the chicken into the fridge for 2-4 hours.
Remove chicken from fridge and grill until the chicken is cooked thoroughly.
